Confession: I’ve eaten more sweet potatoes in the past 6 months than I have in my entire life.
Seriously!
My husband used to devour them whipped into a sugary casserole covered in marshmallows (that was before we started eating whole foods). Now he actually loves them baked and plain (and untainted).
Not me.
Until a few months ago, the only way I’d eat a sweet potato was in the form of sweet potato fries, and even then I wasn’t crazy about ’em. But somewhere along the way of our healthy eating journey, I got brave and began experimenting with various cooking methods and seasonings. I learned I really do like sweet potatoes—but I still prefer them garlicky and savory rather than sweet (sorry, cinnamon sugar topping!).

One recent evening, we were pressed for time and I wanted a quick side dish to complement our chicken dinner. Knowing we had a lot of sweet potatoes to eat up, that my husband loves sweet potatoes, I began dicing them into small cubes (to reduce cook time), not exactly sure what concoction they’d become.
After dicing some zucchini as well, I decided to combine the two with Simply Organic’s brand new Tuscan Seasoning. This flavorful blend includes oregano, thyme, basil, and garlic—some of my favorite spices!—and is light and refreshing, so it’s perfect for summer veggies, meats, or even salads.
Any cooked vegetable without lots of garlic is against my kitchen rules, so I’d recommend tossing a fresh, minced clove into the pan with the veggies for an extra flavor punch. (Because why not?)
To make Tuscan Veggie Skillet, here’s what you’ll need:
- Diced vegetables (I used sweet potatoes and zucchini)
- Extra virgin olive oil
- Simply Organic Tuscan Seasoning
- Minced fresh garlic
- Salt and pepper (optional)

Ingredients
- 3 cups vegetables (sweet potatoes, squash, etc.)
- 2 Tbsp extra virgin olive oil
- 1 clove garlic, minced
- 1 Tbsp Simply Organic Tuscan Seasoning
- salt and pepper (optional)
Instructions
- To prepare the vegetables, peel (if necessary) and dice into bite-sized pieces (about 1/2" cubes). Mince the garlic.
- Heat a skillet over medium heat and add the olive oil. When the oil is hot, add the vegetables and garlic. Stir to combine.
- Cook, stirring occasionally, for about 15-20 minutes, until vegetables are soft inside yet still a bit crispy on the outside. (Test for softness by poking vegetables with a fork.)
- Remove skillet from the heat and sprinkle with Tuscan Seasoning and additional salt and pepper to taste.
