Simple-to-make, No-Rise Pizza Dough comes together in just minutes using a stand mixer, doesn’t require time to rise, and freezes beautifully!
For a long time, I’ve been searching for a new go-to recipe for homemade pizza crust.
Ideally, I wanted an easy recipe that could be mixed together in my KitchenAid mixer. I wanted to adapt it to use whole wheat flour (if desired) without becoming dry, bland and crumbly—like some other whole wheat recipes I’ve tried. And, of course, I wanted it to taste great!
Well, I found it.

The recipe comes from Gen Dalley, a professional baker and cooking school owner. In other words, this recipe is a winner and does not disappoint!!
More Than Pizza Dough
Not only is the crust delicious and DOESN’T require time to rise, it’s versatile. This one basic recipe will make perfect bread loaves, dinner rolls, cinnamon buns (basically anything you can dream up!) perfectly soft and yummy. Every time.
Note: When making bread and rolls, rise time is recommended.
After following this recipe several times with success, I decided to get creative with it. So I doubled the recipe one evening while making crust for pizza, and used the extra dough for wheat rolls, which I froze individually and then combined into a gallon freezer bag to use later.
I got so excited, I even made some personal-sized pizza crusts to freeze for whenever the boys (or myself!) have a pizza craving. I froze the crusts only, but you could easily freeze a ready-to-bake mini pizza with sauce and toppings for an easy last-minute dinner or snack!
A Note About Yeast
Since I’ve been experimenting with various breads, pizza crusts, etc., I decided to buy my yeast in bulk and save over 2/3 of the price of store-bought packets! This is the active dry yeast I buy on Amazon. I simply put about 1/2 cup in a small jar to keep in the fridge to use regularly, and store the rest of the bag in the freezer.
I don’t think I’ll need another dough recipe ever again. Enjoy!

Ingredients
- 1¾ cups warm water, (if using 100% whole grain flour, use 2 cups)
- 2 tsp active dry yeast
- 2 tsp sugar
- 5 cups flour, divided
- 2 tsp salt
- ½ cup olive oil
Instructions
- In a large liquid measuring cup add warm water, yeast and sugar. Set this aside to proof about 5 minutes.
- In a mixer with the dough hook attachment on, add half the flour with all the salt and oil. Then add the water mixture.
- Turn your mixer on to a level 1 for about 30 seconds, then bump it to a 2, then add the rest of your flour one cup at a time. Then turn it to a level 4 for approximately 5 minutes until the dough has left the sides of the bowl completely and it is not sticky to the touch. If the dough is still sticky, simply add more flour in ¼ cup increments until it no longer sticks to your fingers. (Be careful to not add too much flour! It is always best to err on the side of less then add more if necessary.)
- To form pizza crusts, divide dough into two equal parts. (At this point, dough may be wrapped tightly and frozen for future use.) Gently press dough onto a greased baking sheet, forming a crust around the edges. Top with your favorite sauce, cheese, and toppings.
- Bake in a 450 degree oven for 15 minutes, or until cheese is melted and crust is slightly brown.
