No-Bake Chocolate Oat Power Bars
When you need an afternoon pick-me-up, it’s so easy to grab an unhealthy snack or candy bar.
Fortunately, these No-Bake Chocolate Oat Power Bars pack the a powerhouse of antioxidants, omega-3 fatty acids, fiber, and protein your body needs to get going again, without the sluggish feeling that follows other sugary treats.
These bars are so simple to make, so even young kids can help! My toddlers love helping to measure the ingredients and dump them into the large bowl. Next, they can stir until they get tired and then I finish the job!
Similar to my 5-Minute Granola Bars, these bars are also freezer friendly! I love doubling the recipe, pressing the mixture into a 9×13 dish, and refrigerating until it becomes a bit more solid (about 1 hour). Then, I cut into small squares and place them into individual zip top snack bags (or wrap individually in plastic wrap) and freeze.
These make tasty grab-and-go snacks for both kids and adults! Pack a frozen bar in a lunch bag, and it will quickly thaw and be ready to eat by lunch time!
I doubt you’ll return to your usual candy bar after trying these! 😉

Ingredients
- 2 cups oats
- 1/2 cup unsweetened cocoa powder
- 2/3 cup unsweetened shredded coconut
- 1/2 cup ground flax seed
- 1 Tbsp chia seeds (optional)
- 1 cup peanut butter (or any nut butter)
- 2/3 cup honey
- 1 Tbsp pure vanilla extract
Instructions
- Combine all ingredients in a large bowl and mix thoroughly with a wooden spoon (or your hands). The mixture will be slightly crumbly, but also easily molded. If the mixture seems too dry, add an additional spoonful of honey or peanut butter.
- Press the mixture into an 8x8 baking dish. Cover and store in the refrigerator.
- To serve, cut into bars and enjoy!
