Mini Pizza Bites
I recently tried to fulfill my son’s last-minute lunch request for pizza, but there was one problem.
Our family had plans to travel out of state in two days, so the fridge and pantry were mostly void of our usual foods and ingredients.
If I was going to make him this lunch, I was determined to use up ingredients we already had—not rush out to the store for just a few things (and potentially have to waste any leftover ingredients).
So, I searched my kitchen and found these fresh ingredients: 2 zucchinis, 1 green pepper, 1 large mushroom, cheese, and a small amount of homemade marinara sauce, left over from a pasta dish. Feeling a little like I just arrived on an episode of Chopped, I decided to combine them all into one meal.
Usually, I’d make my homemade pizza crust and throw everything on top, but I just wasn’t really feelin’ the zucchini as a pizza topping. Plus, even though my homemade dough doesn’t require time to rise, the dough would take me a bit more time to prepare…and my son was hungry. Like NOW.
I remembered seeing a few recipes on Pinterest that used zucchini as a carved-out boat, filled with toppings, and baked to perfection. Yet, the bake time was typically longer than I was hoping to spend on this lunch.
So, I opted to slice the zucchini into rounds to use as the base for a few pizza toppings…and voilà! Lunch was served. In under 15 minutes!

Ingredients
- 2 zucchini
- 1-2 tbsp olive oil
- 1/3 cup pizza sauce (I prefer homemade sauce for the best flavor)
- 1/2 cup mozzarella cheese, shredded
- dried oregano
- optional toppings: chopped vegetables, pepperoni, cooked chicken, etc.
Instructions
- Preheat the oven to 425 F.
- Slice zucchini into rounds, about 1/4-inch thick, and place on a large baking sheet. Lightly drizzle the zucchini with olive oil and bake 4-5 minutes.
- Remove the baking sheet from the oven and top each zucchini slice with a spoonful of sauce and sprinkle with cheese and oregano. Add any additional toppings (if desired), and bake 8-10 minutes, until cheese is melted and edges start to turn golden brown.
