Easy Grilled Bruschetta Chicken is a simple and delicious summer meal. Pair it with a side salad or grilled vegetables for fresh, seasonal taste!

Grilled Bruschetta Chicken is hands-down a favorite around here! It’s full of fresh seasonal ingredients, it’s fast to prep, it’s filling but also light for hot summer evenings, and it’s so tasty after you get those charred bits from the grill!
How to Make Grilled Bruschetta Chicken
It’s super simple to prepare grilled bruschetta chicken. First, grill the chicken (just chicken breasts, salt and pepper!). Next, combine the bruschetta ingredients in a bowl and let them meld while you wait for the chicken to grill (this part could also be prepped earlier in the day if you prefer). Last, plate your hot-off-the-grill chicken and top with the fresh bruschetta. Fast and delicious!
And if you don’t have a grill, you can alternatively bake the chicken breasts in the oven at 350ºF for 30 minutes!
Grilled Bruschetta Chicken Ingredients
This dish is so simple and perfect for summer because it only requires a handful of fresh seasonal ingredients!
For the grilled chicken:
- chicken breast
- salt & pepper
For the bruschetta topping:
- tomatoes
- red onion
- garlic cloves
- fresh basil leaves
- extra virgin olive oil
- balsamic vinegar

Ingredients
- 1 lb chicken breast
- salt & black pepper, to taste
- 3 tomatoes (medium, diced)
- 1/2 cup red onion (finely diced)
- 2 garlic cloves (minced)
- 1/4 cup fresh basil leaves (chopped)
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
Instructions
- Preheat the grill to medium heat. Add the chicken breasts, season with salt and black pepper, and cook 10-15 minutes per side, or until cooked through.
- In a small bowl, combine the tomatoes, red onion, garlic, basil, olive oil, and balsamic vinegar. Season with salt and pepper to taste.
- To serve, top the chicken breasts with bruschetta and enjoy!
Notes
