Over the winter, I miss my husband’s grilling. Chicken, steak, burgers, veggies—no matter what he throws on the grill, I want to eat it, and I want to eat it immediately.
Of course, during cold weather I LOVE using my Crock-Pot for lots of soups and one-pot dishes, but there’s something to be said about delicious meats getting charred and smoky over an open flame!
New Year’s Day brought us nice weather so we decided to take advantage of it and start the year right with a nice meal of grilled steak, shrimp, and veggies! But since then, we’ve been cooking indoors again.
Thankfully, this easy recipe for oven roasted chicken thighs reminds me of grilled chicken — it’s moist and full of flavor with a delicious crispy skin. It’s so simple and impossible to mess up!
After baking the chicken, you add a simple glaze (honey and mustard) and broil the chicken a few minutes longer to get that irresistible crisp, slightly charred skin. And if you don’t care for the flavor of honey mustard, don’t be scared away! Trust me, the glaze brings out delicious flavor but doesn’t even taste like honey mustard. Just yummy and savory!
We paired the chicken with this throw-together Mediterranean Quinoa Salad, which also reminds me of summer because it’s so colorful and fresh!

Ingredients
- 8 bone-in, skin-on chicken thighs
- ½ cup olive oil
- 1 lemon, juiced
- sea salt and ground pepper
- 1 Tbsp grainy mustard
- 1 Tbsp honey
Instructions
- In a bowl, toss chicken thighs with olive oil and lemon juice; season with salt and pepper and marinate 1 hour (or overnight).
- Preheat oven to 375 degrees. Transfer chicken, skin side down, to a rimmed baking pan and bake 20 to 25 minutes; flip and bake 10 more minutes.
- Stir together grainy mustard and honey. Brush glaze onto chicken and broil 5 minutes.
