A delicious coffee milkshake is just a minute away, using this simple method!

No one in our family drinks coffee.
I buy k-cups to have on hand for guests, but we keep our Keurig tucked away in a cabinet!
But oh, I do love the smell of brewing coffee! Something else I love…coffee ice cream! How can I not? It’s creamy, cold and sweet, with just a touch of coffee jolt to give this momma an afternoon pick-me-up!
One downside: If I buy a whole carton of coffee ice cream, I will be the only one responsible for eating it. ALL of it. (I mean, I won’t complain…until my pants no longer fit around my waist!)
One day I had a breakthrough idea for how I could eat coffee ice cream–whenever I want–without having to eat an entire container! The idea came to me one day after my toddlers got into my cabinets and played with the k-cups. They had enjoyed placing an entire box of k-cups, one by one, into the Keurig. The appliance was unplugged, but to them, the next best thing to actually brewing the coffee was puncturing a hole in each k-cup!
The Dilemma: So, I was left with a box full of opened k-cups, which I couldn’t bear to throw away, yet I knew we wouldn’t use them quickly since we don’t drink coffee regularly.
The Solution: I decided to go ahead and brew the k-cups–yes, also one by one!–to preserve their freshness, and then decide what to do with the brewed coffee later. We happened to have a carton of vanilla ice cream in the freezer, which we enjoyed for dessert that evening. Then the idea came to me: I could stir some of the freshly brewed coffee into my ice cream! (I knew no one else would fight me about this since my husband and toddlers could care less about coffee!)
And better yet, since I had waaaay too much coffee to use in a matter of days, I utilized ice cube trays (with lids!) to freeze small amounts of coffee for later use–in ice cream, of course!

Since one standard ice cube holds approximately one ounce of liquid, I use two cubes for each milkshake serving. You can adjust the amount to more or less coffee based on your liking!
Now I can have a delicious coffee milkshake anytime I want! 🙂
What You’ll Need to Make a Quick & Easy Coffee Milkshake
- Brewed coffee
- Vanilla ice cream (I love the natural vanilla, made with only milk, cream, and sugar)
- Milk (optional)
- A mug (or drinking glass)
- A spoon (perfect for making just one serving!)
- Blender (optional, but helpful for making more than one serving)
How to Make Your Own Coffee Milkshake
It really is just a 1-minute process!:
- Start with 2 ounces (more or less to taste) of hot coffee in a mug.
- Scoop in vanilla ice cream, and stir until blended. If you like a thinner milkshake, simply add a splash of milk. Done!

Ingredients
- 2 oz brewed coffee (or 2 frozen coffee cubes; see note)
- 1/2 cup vanilla ice cream
- 1-2 Tbsp milk (optional)
Instructions
- To a microwave-safe mug, add hot brewed coffee. (Reheat if necessary; you want the coffee to be hot!)
- Scoop vanilla ice cream into the mug and gently stir with a spoon, until well blended and thick.
- Optionally, stir in a splash of milk for a thinner milkshake.
- If desired, serve with homemade chocolate syrup and whipped cream on top!
Notes
Makes one serving. To make a larger batch, use a blender to incorporate the coffee and ice cream.
Make coffee "ice cubes" by freezing extra brewed coffee into a covered ice cube tray . Once frozen, transfer cubes to a zip top bag to store in the freezer. To make a milkshake, heat two cubes per serving in the microwave until melted and hot, then follow steps 2-3.
