These 3-Ingredient Gluten-Free Peanut Butter Cookies are refined sugar-free and perfect for any occasion, or an everyday snack.

3-Ingredient Gluten-Free Peanut Butter Cookies
Because these peanut butter cookies only require 3 ingredients, they are the perfect recipe for kids to help in the kitchen (also one of my favorite things, if I can easily control the mess they make)!
If you want to make the cookies a bit more fancy, try adding in some of your favorite cookie components: chocolate chips (or other baking chips; this brand is allergy-friendly!), chopped nuts, or dried fruit, such as raisins.
Yields: 15-18 cookies

Ingredients
- 2 ripe bananas
- 1 egg
- 1 cup natural peanut butter
Instructions
- Preheat oven to 350 F.
- In a medium bowl, mash the bananas with a fork. Add egg and peanut butter; stir well to combine. Stir in any add-ins.
- Drop the batter by tablespoon onto a greased baking sheet. Gently press with a fork to help the cookies spread. Bake for 8-10 minutes or until baked through and slightly browned around the edges.
- Allow cookies to cool for 5 minutes.
